While the SE700 can sew and embroider on a large variety of fabrics and thicknesses, we would recommend caution when attempting to sew with thicker fabrics. The process requires a lot of trial and error (adjusting the tension, thread type, needle size, etc) and can be slow & time consuming. We would not recommend the SE700's primary use be for leather/denim and follow any guidelines from the user manual for settings.
As for stiff hats like Fedora's, this embroidery machine does not have a capable hoop to properly embroider onto it.
